Opening Shift Procedures & Calibration

Overview
The success of the entire trading day is determined during the first 90 minutes before our doors open. Execution during the morning shift ensures our display cases are fully stocked with fresh, warm product the moment our first guest walks through the door.

Morning Sequencing Roadmap
06:30 AM – Arrival and Facility Inspection: Disable the security alarm, turn on all front-of-house and back-of-house lighting zones, and inspect the display cases for absolute cleanliness.
06:45 AM – Oven Calibration: Power on the convection ovens and set the dials to exactly 325°F. Cross-check the digital reading against the internal analog thermometer after 20 minutes to verify thermal accuracy.
07:15 AM – The First Drop: Pull the required Tier 1 and Tier 2 base dough pucks from the walk-in defrost rack and arrange them on parchment-lined baking sheets with precise 3-inch spacing.
07:30 AM – Register Setup: Count the morning cash vault drawer to verify the baseline opening bank sits at exactly $200.00 in mixed bills and coins.
07:45 AM – Case Staging: Place the first fully baked, cooled batches of rotating weekly flavors into the presentation display glass, ensuring all flavor tag labels are clean and straight.
